Mashed Potatoes
Ingredients:
5 potatoes
small bunch of coriander
1 cup almond milk
salt and pepper to taste
Method:
- Boil the potatoes until they’re soft, around 15 minutes. Meanwhile, chop the coriander.
- Place the boiled potatoes in a bowl and remove the skins. Discard the skins.
- Smash the potatoes along with the almond milk, cilantro, and salt and pepper to taste.

Elbow Pasta
Ingredients:
1 bag of quinoa pasta (substitute 4 cups of your favorite uncooked pasta if you prefer)
salt
1 Anaheim pepper
1 garlic clove
small bunch of coriander
1/2 serrano pepper
1/4 white onion
1 cup soaked cashews
Method:
- Boil the pasta along with a pinch of salt according to package directions, or until it’s done to your liking.
- Meanwhile, blend all of the other ingredients with enough water to create a rich but creamy consistency.
- Strain the finished pasta, then gently toss the pasta with the creamy sauce. Yum!

Plantain Empanadas
Ingredients:
2 plantains
1 cup pre-cooked beans
Method:
- Cut the plantains into small pieces, then boil them for 10 minutes or until they’re soft.
- Meanwhile, smash the beans into a thick paste.
- Remove the plantains from the water and smash them until they’re smooth.
- Form a small handful of the plantain dough into a ball, then smash it smooth until it’s the shape of a small tortilla.
- Place a spoonful of mashed beans on the plantain tortilla. Fold it in half to form an empanada, being sure to gently pinch the edges shut.
- Repeat steps 4 and 5 until you’ve used up all of the plantain dough.
- Bake the empanadas at 350 degrees Fahrenheit for 20 minutes. Turn them over and bake for another 20 minutes.

Christmas Salad
Ingredients:
2 apples
2 medium carrots
1/4 cup raisins
1/4 cup cashews
2 dates
1/4 cup water
Method:
- Cut the apples into small bite-sized pieces. Shred the carrots.
- In a bowl, mix together the cut apples, shredded carrots, and raisins.
- Blend the cashews, dates, and water together to form a dressing. Pour it over the salad and toss to combine. Enjoy!

January 1, 2018Hi!! I’ve been wondering if you have a brand of Almond Milk that you recommend or like most. I’m lactose intolerant and have tried many but they don’t taste very good. I still drink it because I have to! Howeve, I’m trying to start a vegan lifestyle (and feel lost and overwhelmed) for my children not just myself. Yet, switching over to almond or coconut milk for my kids is tough! Usually I buy almond milk for myself and milk for them. When I tried almond for them they said it was terrible (they’re 5 and 3 years old) . Coconut milk has worked at times if it’s mixed into the food (like with farina). Any ideas? Perhaps one brand makes better tasting almond milk? Help! 😦
